Idiazábal -
Spain
If you love Manchego, you
should definitely give this fantastic
cheese a try. Originating in the Basque
Country near Pamplona, this sheep’s milk
cheese is strong, slightly acidic and
piquant, and buttery with lots of great
characteristic sheep’s milk flavor.
Goat Gouda
- Netherlands
This cheese is for people who
think they don’t like goat cheese! This
cheese is smooth and velvety sweet.
With its caramel scent and cooked milk
taste, this cheese will appeal to your
sweet tooth.
Roaring 40’s
Blue -
Australia
King’s Island, situated south
of Melbourne, is legendary for unique
pastures and natural feeding methods.
As a result, King Island cows are
reputed to produce the sweetest milk in
all the land, and this cheese is no less
reputable. This blue is full flavored,
with a sweet nutty flavor, and aged in
blue wax sealing in moisture and
creating a smooth creamy texture.
Piave
- Italy
This is a unique cheese with a very
specific process of cooking and aging
specific to the region. This cheese is
similar to Parmigiano reggiano in
texture, and is intense and full bodied,
only intensifying with age creating an
absolutely exceptional cheese.
Humboldt Fog
-
California
In Humboldt Country, where the redwoods
meet the Pacific, this magnificent
goat’s cheese is created. It is the
signature offering of Cypress Grove, a
ripened goat’s cheese with a layer of
edible vegetable ash in the center and
along the exterior; absolutely elegant,
soft, creamy and luscious with a subtle
tangy flavor.
Oregon
Smokey Blue
- Oregon
This Rogue River blue cheese is smoked
over northwest grown hazelnut shells,
creating a balance of sweet caramel and
nutty flavors that magically contrast
the sharpness of the traditional blue
flavor. It has a semi-soft texture and
is aged in Roquefort modeled caves.
